A refreshing zesty drink with limes, mint and a good glug of white rum. Perfect for a warm summer's afternoon in the garden with friends.

Ingredients

6 limes sliced
3 tbsp granulated sugar
6 mint sprigs
ice
400ml white rum
500ml sparking water

Method

  1. Chop each lime into six pieces and add them to a two-litre jug. Add the sugar and squash the lime wedges with the end of a rolling pin. Keep crushing to get out all the juices.
  2. Strip the leaves off the mint springs and crush them in your hands. to bruise the leaves gently, then add them into the jug.
  3. Add the rum and stir with a long-handled spoon to mix all the ingredients together
  4. Top up the jug with the sparkling water. Stir gently once more.
  5. Finally add some ice to some tall highball glasses, then serve. Try nd get a lime or two and a little mint into each glass or add a few extra leaves.
